1 Large Sliced Eggplant (Coin Shape)
1/4 Cup Mini Pepperoni’s
1 Cup Shredded Mozzarella Cheese
1/2 Cup Lowest Carb Marina you can find
Oregano
Instructions
1. Preheat oven to 400 degrees F.
2. On a greased baking sheet, add eggplant. Bake for 20 minutes.
3. Pat eggplant dry. Add seasoning and toppings. Broil for 5 minutes.
