Meatloaf Mini’s w/ Cheese


1 lb Ground Beef

1 cup Crushed Pork Rinds

1 cup Onion

1 Egg

10 tablespoons of Mozzarella Cheese

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

5 1/2 tbsp Ketchup no sugar added

Swerve Brown Sugar optional


1. Preheat oven to 350 F and grease muffin pan.

2. In a bowl combine ground beef, crushed pork rinds, egg, chopped onion, onion powder, and garlic powder.

3. Shape the mixture into a puck like shape, adding the mozzarella to the center, and place into muffin pan. Should make 10 mini meat loaves.

4. Top each mini meatloaf with 1/2 tablespoon of no sugar added Ketchup and optional swerve brown sugar.

5. Bake for 20 minutes
